Chondrus crispus

**Definition:** An edible red seaweed, with potential antioxidant, anti-inflammatory and anti-microbial activities. Chondrus crispus contains a variety of bioactive compounds, such as caroteinoids, including beta-carotene, zeaxanthin and lutein, polyphenols, including flavonoids and tannins, and sulfated polysaccharides, including carrageenans. Upon administration, the active compounds in Chondrus crispus scavenge reactive oxygen species (ROS) and may protect cells from the damage of oxidative stress, and may prevent inflammation and microbial infections.
