**Definition:** A species of Lactobacillus that occurs in FERMENTED FOODS where its ability to produce LACTIC ACID; ANTI-INFECTIVE AGENTS; and BACTERIOCINS make it useful as a FOOD PRESERVATION agent. It is also used as a PROBIOTIC.
